Commis
This 1-star Michelin rated restaurant over in Oakland came recommended by a friend of mine on social media. Always up for a new experience and to try an up-and-coming chef’s food, I decided to check it out. This is the menu we were served on December 21, 2014:
Amuse - Caramelized onion financier, buckwheat oyster cracker
Bay Scallops - Fermented cucumber, dill, limes, sea greens
Warm Custard - Radish, mushroom, dungeness crab
Dungeness Crab - Meyer lemon, coral, dried celeriac
Winer Brassicas - Hazelnuts, candied apple cider, capers, soft herbs
Smoked Trout Roe - Herbal yogurt, malt vinegar, warm artichoke
Tile Fish - Lobster broth, salsify, ginger, yuzu, alliums
Aged Grilled Duck - Purple potato, poached prune, sauce civet
Brie Tart - Blueberry, thyme
Frozen Meyer Lemon Marshmallow - Gin botanicals, celery, herbs
Cara Cara - Cara cara ice, dark chocolate sable, coconut creme
This tasting menu was quite a bit different from the ones I have had at other Michelin starred restaurant so far. The food is very delicate and light, with very little heavy fattiness in any of the courses. Special care is placed to let each individual ingredient’s flavor come to the forefront as you’re tasting. This was definitely a great experience for me to have and I’m sure that Commis will be a restaurant that continues to grow.
