This is an archive post from a previous version of my blog. Canlis is widely regarded as one of the best restaurants in Seattle and affords its diners an amazing view of Lake Union. This is the menu I had for dinner on March 18, 2013:

Amuse Bouche - Assortment of snacks

Carrot & Curry - Chive oil

Rhubarb - Celery, peas, smoked steelhead roe

Hearts of Palm - Uni, yellowfin tuna, foie gras, green apple espuma

Sweetbreads - Congee, pearl barley, tripe

Wagyu Beef - Bone marrow, yogurt, turnips

Rhubarb Sorbet - Bergamot, grapefruit
