This is an archive post from a previous version of my blog. While traveling to LA for a friend’s wedding we visited what many people regard to be the best restaurant in the city, Providence. This 2-star Michelin rated restaurant specializes in seafood. Here is the menu we had for dinner on March 21, 2013:
“Greyhound” reverse spherized
Scallop Nasturtium - Scallop tartare, nasturtium, crispy rice
Squid & Abalone - Chorizo, miso
Uni Canape - Uni, lardo, truffle, toast
Grilled Kumamoto Oyster - American caviar, smoked butter
Goma Saba - Cucumber, spring onion, nantes carrot, coriander seed, young ginger
Spot Prawn - Cooked tableside on hot rock, roe, fried prawn head
Barley Cooked Hokkaido Scallop - Risotto, cabaceira ham
Sardine - Red wine braised artichoke, carrots, pearl onion, parsley jalapeno pistou
Unagi - Buckwheat, quail egg, smoked butter, mirin
Fish Face - Peas, black truffle, fumet
Japanese Wagyu Beef - A5 wagyu beef, braised baby carrot, turnips, shiitake, chicken consomme
Cheese - Comte (France), Malvarosa (Spain), Serrat Gros (Spain), Pecorino Noce de Foglia (Italy), Blu di Buffalo (Italiy)
Tangerine Sorbet - Pineapple passion fruit curd, kalamansi, banana
Crème Fraîche, Sablé Breton - Almond financier, chestnut jam, vanilla mousse
Caramelia Mousse - Manjari cream, milk ice cream, cocoa nib dentelle
This was an incredible meal with perfect service. While everything was delicious, this dinner was notable for me as it was my first time eating Japanese A5 grade wagyu beef. It literally melts in your mouth!
