The American Restaurant
Growing up in Hawaii I never imagined that I’d spend a lot of time in the Midwest. Then, a couple of years ago, I moved to Minnesota with my wife so she could pursue her doctorate. Now, my work takes me around the Midwest area including the Dakotas and Wisconsin. Recently, I also went down for some seminars in Kansas City for a few days. Interestingly enough there are a couple of restaurants in Kansas City that were on my list of places to try one day, so the work trip ended up being the perfect excuse!
Here is the menu I had for dinner at The American Restaurant on October 7, 2013:
Amuse - Smoked salmon
Amuse - Grilled fig, burrata, balsamic
Duroc Pork - Peach mustard, Szechuan peppercorn, fermented cucumber, black garlic
Maine Lobster - Cantaloupe, whipped avocado, coral vinaigrette, long pepper
Coho Salmon - Smoked potato, cabbage marmalade, brussels sprouts, mussel vinaigrette
Black Pacific Cod - Devil's club dashi, scallion dumpling, pickled roots, matsutake
Pekin Duck - Charred savoy cabbage, rhubarb condiment, smoked maitake, huckleberry
Milk-fed Veal - Celariac, pickled cherry, chanterelle, sorrel
Bananalicious - Vanilla bisquit, banana parfait, white chocolate powder, bubblegum gelato
